Sunday Salads

So I tend to cook/prepare a lot of food on Sundays so that I have things to snack on during the week when I run in and out. Today I went with two different salads and attempted kale chips. The salads came out really good, the kale chips, not so much.

Asian Cucumber Salad
I love this salad during the summer with fresh picked cukes. Technically it is a salad but I really eat it a few slices at a time whenever I open the refrigerator!
Super easy and yummy.

Two cucumbers peeled, seeded and cut however you want them
1/2 tsp sesame oil
1 Tbsp rice wine vinegar
1 Tbsp soy sauce
1 Tbsp Honey

Whisk all the seasonings together and pour over cut cucumbers and toss to coat. I like to add sesame seeds over the top as well. Chill for at least 1 hour.

The other side salad I made is also SUPER easy!

Broccoli, tomato, chickpea salad

1 head of broccoli
1 pint of cherry tomatoes halved
1 can drained chick peas

Pretty simple, steam the broccoli, half the tomatoes, add chickpeas. Done : )

For a dressing I use the juice of two lemons, a few teaspoons of EVOO and two cloves of crushed garlic.

I mentioned that I attempted kale chips too. Well, let's just leave it at this - I set my fire alarm off and my house stinks right now!!! Oh well, I am growing more kale anyway.
